IMPORTANT NOTE: Guys, I see that we forgot to place the clip where we added the the lemon zest to the cake 🙈 You have to add it when you add the sugar to the yolks 😉 Sorry about that 😘💕

►► INGREDIENTS ➜ 8 - 10 portions (tray - interior measures: 37x25x1,5cm)
► CAKE
● 4 L Eggs
● Pinch of salt
● 120g White sugar
● Lemon zest (1 tbsp) (leave some slices for the decoration)
● 120g All purpose flour
► SYRUP
● 40ml Water
● 40ml White sugar
► LEMON CREAM (FOR THE VIDEO)
● 200g Mascarpone cheese (or cream cheese)
● 300ml Cream with at least 35% of fat
● Lemon zest (1 tbsp) (Leave some for the decoration)
● 60g Icing sugar
► COAT
● 50ml Cold water
● 7g (2 tbsp) Unflavored sugarless gelatin (or 4 sheets of gelatin)
● 240ml Condensed milk
● 100ml Just squezzed lemon juice
● OPTIONAL: Yellow edible dye
► DECORATION (OPTIONAL)
● Whipped cream or Chantilly cream (80ml)
● Lemon slices
● Custard or any fruit you like
● Caramel almonds
NOTE: If you want you can swap the 7g of powdered gelatin for 4 sheets of gelatin. For it you’ll have to hydrate the sheets in cold water for 5 minutes. Then drain them, place them in the 50 ml of water I said in the recipe of the cover and melt it in the microwave or at low heat. The rest of the recipe is the same :)
