색다르고 특별한 레몬 티라미수를 만들었어요.
생각보다 레몬과 커피가 너무 잘 어울려서 한입 먹고 놀랐어요.
그냥 티라미수도 맛있지만 레몬 커드가 더해지니 상큼하게 기분전환하기에 좋은 것 같아요.
그릇에 쌓아 만드니 간편하고 보관하기도 좋더라구요.
레이디핑거 쿠키에 커피는 충분히 적셔야 부드럽고 맛있는 것 같아요.
정말 부드러워서 입안에서 사르르 녹는답니다~

달걀흰자 1개
설탕 30g
바닐라익스트랙 1g
달걀노른자 1개
박력분 30g
달걀노른자 2개
설탕 40g
소금 0.5g
옥수수전분 5g
레몬즙 60g
레몬 제스트 3g
우유 40g
무염버터 25g
마스카포네 치즈 250g
설탕 40g
레몬커드 40g
깔루아 5g
생크림 140g
커피 (물 50g + 인스턴트 커피 2g)
1 Egg white
30g Sugar
1g Vanilla extract
1 Egg yolk
30g Cake flour
2 Egg yolks
40g Sugar
0.5g Salt
5g Cornstarch
60g Lemon juice
3g Lemon zest
40g Milk
25g Unsalted butter
250g Mascarpone cheese
40g Sugar
40g Lemon curd
5g Kahlua
140g Heavy cream
Coffee (50g water + 2g instant coffee)
[만드는 과정]
1. 달걀흰자에 설탕을 2번 나누어 넣고 단단한 머랭을 만든다.
2. 달걀노른자와 바닐라 익스트랙을 넣고 저속으로 휘핑한다.
3. 밀가루를 체에 쳐서 넣고 주걱으로 섞은 뒤 짤 주머니에 담아 오븐 팬에 짠다.
4. 윗면에 슈가파우더를 뿌리고 190도 오븐에서 10분 정도 굽는다.(예열 200도)
5. 달걀노른자에 설탕과 소금을 넣고 섞고 옥수수 전분을 넣고 섞는다.
6. 레몬즙과 레몬제스트, 우유를 넣고 섞은 뒤 약불에서 가열한다.(충분히 가열)
7. 버터를 넣고 섞은 뒤 체에 내리고 랩을 씌워 잠시 둔다.
8. 마스카포네 치즈에 설탕을 넣고 섞고 레몬커드(40g)을 넣고 잘 섞고 깔루아를 넣고 섞는다.
9. 생크림을 단단하게 휘핑한 뒤 골고루 섞는다.
10. 그릇에 레이디 핑거를 깔고 커피시럽(물 50g+인스턴트 커피가루 2g)을 충분히 적신다.
11. 크림을 넣고 평평하게 한 뒤 레이디 핑거를 올리고 커피시럽을 묻힌다.
12. 크림을 올리고 평평하게 한 뒤 레몬 커드를 부드럽게 풀어 그 위에 짠다.

I'm Italian and I love this variation of tiramisù. I usually dip the lady's fingers in a syrup made with lemon, water, limoncello and some sugar as well. It makes the whole dessert taste so fresh and citrusy 😍🥰

I really love the concept of a lemon tiramisu but I can't get over combining Kahlua with lemon curd? I think it might be better if you forget the coffee flavouring and coat the ladyfingers in Limoncello. Yes, I realize then it would no longer be tiramisu. Thanks for sharing this with all of us and I loved learning how easy it is to make ladyfingers. #tiramisu

Limoncello would be amazing. Lemon and coffee are both so acidic, there’s a reason why it’s never paired together.

To shorten the prep time, you can buy spongefingers so you only have to make the creamy bits :) I'd also use much more of the cookies/cake to that amount of cream, I'd gag from this cream overload :D And then you could probably feed the whole family with this :)
