Lemon syrup
115 grams of sugar
410 g of water
50 g of vodka
70 g juice
zest of 1 lemon
Lemon Kurd
200 g fresh lemon juice
4 yolks 2 eggs
2 tbsp starch
120 g butter
230 g sugar
zest of 2 lemons
Lemon cream
200 g powdered sugar
500 g mascarpone
360 g cream 33%
zest of 1 lemon
1. Zest of one lemon, sugar, water, vodka and lemon juice bring to a boil and cool.
2. Grind sugar with lemon zest.
3. Squeeze the juice from the lemons.
4. In a saucepan, mix sugar with zest, lemon juice, eggs, yolks, butter and starch.
5. Cook over low heat until thickened.
6. When it starts to boil, turn off and punch with a blender.
7. Grind the kurd through a sieve and let it cool.
8. Whipped cream to stable peaks.
9. Separately beat mascarpone with powdered sugar, lemon zest and 1/2 lemon kurd.
10. Stir the mass until smooth and add half the whipped cream.
11. Gently mix with a spatula from the bottom up. The mass should become homogeneous.
12. Savoyardi moisten in syrup and spread on the bottom of the form.
13. Top with half the cream and level with a spatula.
14. Spread another layer of cookies.
15. Spread the remnants of the cream on top, level with a spatula and put in the refrigerator for a couple of hours.
16. The remaining lemon kurd is whipped with a mixer and poured onto tiramisu, leveled with a spatula and sent to the refrigerator for a couple of hours.
17. Decorate and serve.
