I havent burnt sugar in a long time. But I used white sugar. Only when we ran out of browning. Which I didnt know it was called that. Cuz the bottle we bought was called burnt sugar lol

I'm Jamaican and I know we tend to use browning on meats (my household more used soy sauce as a browning agent). It was when I went to University in Barbados that I learnt about using caramelized sugar as browning. Nothing wrong with using the different methods. Ppl need to be more respectful of other options/methods of cooking. To each his own 😊

I’m from Barbados and funny enough I learnt to caramelize the sugar for browning meats from my Jamaican flat mates at UWI

As a born and raised Trinidadian now living in London, I can say with confidence that we use brown sugar to brown our meat. Anyone trying to tell you about your culture needs to check themselves. Also, their is more than one way to make a recipe fabulous!!!

In my family (from South Carolina) we brown flour instead of sugar. But people use what they grew up with. Or what they enjoy and it's all good. I like seeing a different way to cook a dish. I'm a Jamaican, still living in Jamaica. As a child growing up my grandmother would brown the sugar in a pan an tip a little bit of water to it. Nowadays we use browning or soya or chinese sauce to get that colour. To each it own, in other words the choice is urs

Well said am Jamaican and that's how I grew up seeing my mom doing it burning the sugar and I absolutely love it. To me it gives me a different nicer tastes. I even did some since week and my daughter loved it. Your doing an awesome job. Love this channel 👋👋👋

Just came across your channel. This looks yummy. We have a similar dish in Kenya, we call it PILAU, meat and mix of spices called pilau masala, then add rice... you can try it next time and see if you like it ❤.

We in Trinidad use this method of browing meat. This is how I grow up knowing how to brown meat. Ppl may use different methods, but imma stick to this method.

In south asian culture we use onions for browning, we also do not use cream. yours is obviously a different recipe which the person you were speaking to didn’t understand. you were not being rude.

Yes, I use brown sugar to brown my meats too, I've used the browning too and it really doesn't matter which one you use, it's a preference and I prefer the brown sugar. You keep doing you sweetie

Terri-Ann i am with you. I like using my sugar instead of the browning. I am old school like my mom. I love your cooking but i don't like the coconut milk in the can. I buy the coconut and blend it, it gives the food a better flavor than the can coconut milk. Your cocking is always perfect. Love the way you explain everything and you take your time. Browning sugar is the traditional way of making the chicken brown in stew chicken. That person must be young. Anyways, this looks delicious!

You are correct in using the sugar. Depending on the island you can use browning or the burnt sugar . Continue to cook the way you was taught. Love your recipies

In St.Lucia, we caramelize the sugar as a browning method. The store bought browning is just that, store bought. You were not rude and some people need to respect various methods of cooking. There are several ways to get the same result.

Loved this video! You weren’t rude at all. In Jamaica we use browning or soy sauce in meats. However, I’ve learned from friends that every Caribbean does something different. I wish people would be more open before criticizing. I’m definitely going to make this recipe.

I'm from Trinidad and Tobago 🇹🇹 and we make pelau all the time, and that's exactly how we brown our pelau...That's how browning is made. Your pelau came out very nice.

Can you do a green papaya salad girl that chicken and rice looks delicious and I use brown sugar and browning when I make my brown stew chicken it’s to each own , it’s all about the flavor

Pelau is a dish of Afro Trinidad & Tobago origins. It is T&T's version of the "Caribbean Rice and Peas/Beans Pilaf ". Caribbean integration has lead to the dish being transferred to other islands where the original recipe is used or there may be a variation of the ingredients/method. Other rice dishes in T&T are called "Cook-ups" .

I am also a Jamaican and I use sugar to brown my meats, and I prefer using it than the browning so don't listen to naysayers and u do you mama. A cook dem can't cook. Blessings always. People are so used to using packet/bottle/ready made things that they think everything starts off in a bottle or packet🙄. Next thing they will comment on someone's page that ackee comes from a tin and not a tree🤦🏾‍♀️. You are not rude at all. The fact that they left a comment without knowing what they were talking about speaks for itself.

In Antigua and Barbuda, we use both methods to get that beautiful brown colour... So you know what you are saying and doing

Hi Terri-Anne, In regards to the 'BROWNING' comment a viewer made, yes, we all do things differently. No, you don't have to add Browning, browning simply does what it says on the bottle! It just BROWNS the look of your meat; which is more aesthetically pleasing and appetizing to Afrocaribbean people. With your method Terri-Anne, you are ADDING FLAVOUR to your dish; which is USEFUL and DELICIOUS! I have, since a young girl, been adding sugar to my dishes; which has always been appreciated by those who have eaten my dishes, so you go girl! In regards to the use of WASHING UP LIQUID on meat, I totally disagree with that also, however, I DO use the most tiniest amount of washing up liquid to wash my fruit & vegetables ( THE SIZE OF A GREEN PEA SLICED IN HALF) the reason I do that is because I did a small experiment at home where I washed half my fruit & vegetables with plain water and the other half with a very thin film of the washing up liquid coated on my hands. The residue of dirt that then came off my fruit & veg was shocking! The soap liquid died immediately; like it would if your hair had shampoo and the dirt in your hair killed the bubbles, but on the second wash, there would be loads of bubbles because your hair is now more cleaner, well with my veg, they were only given one wash with the liquid and what it does is, it removes the thin layer of pesticides that are sprayed onto the productthen when i rinsed my vegetables, they were squeaky clean and looked much more cleaner than the ones just rinsed with plain water.

Growing up in lucia the older folk would say the browning is short cut but the burnt sugar will make your man marry you 😹😹😹 cuz when the browning bottle finishes he will still come home to a cooked meal 🍴 😹😆🇱🇨🇱🇨🇱🇨🇱🇨🇱🇨🇱🇨🇱🇨🇱🇨🇱🇨

But that's how you make browning... If you leave the sugar after it foams it'll darken and turn into the browning that's sold in the bottle. Literally the same thing.

In grenada, we (atleast my household)use sugar, brown or white. I only learned (maybe a few years ago) that there was browning in a bottle. So I mean this person could have certainly googled this method if they were not aware.

This dish is one of my favorite Caribbean dishes. Someone who is from Triadad cooked it. I fell in love with this dish that was about 7 years ago haven't had it since. I am delighted you are making this dish now I can try to make it myself with fried plantain. Thanks.

If you can be told you are "wrong" and then told what you "should" do, then why can't you ASK for clarification of what they are speaking of? Why people get "different" and "wrong" confused is confusing in and of itself. You handled it graciously from what I can tell and I'm sure your (including me) 490,000 subscribers (and counting) would not tune in if we didn't appreciate your (1) gracious hospitality and (2) your delicious meals! I'm from the Virgin Islands and that's how I was taught. People in the 1920's did not have a bottle of browning. Smh, people are rude.

Jamaican I'm the house!!!! You know us Caribbean people brings biggggg flavours when we're cooking. I had to watch twice because I couldn't get over how delicious that meal looked. And no you weren't being rude that person clearly don't know how to cook and maybe if you had told them it's sugar that mare browning they would still have something else to say, so you sent them in the right direction

You weren’t rude at all. The commenter was ignorant and his/her feelings got hurt when hit with the truth. In Belize some people brown the sugar. I personally don’t do it, but that’s just me.

We Trini’s use brown sugar as well! We also have browning but to each their own! There is NO wrong way to AMAZING FOOD. Always enjoying your videos !!!!

Trini people use brown sugar. As time went on people started to use browning to make cooking easier.

In Saint Lucia we use both browning and sugar. I am Saint Lucian but lives in France but first lived in Martinique and there they just let the meat color with a hot pot on medium fire and some oil. Everywhere is different. You weren’t wrong, people must learn to respect others POV. Respect

I’ve seen My family use both browning and brown sugar to brown chicken . I’m scared to try the sugar because I don’t want to burn it but apart from that it taste really good
