I meant to post this the other day when you were talking about increasing protein intake and, yes, you need a ridiculously large amount of it despite what the USDA tries to push in the U.S. If Korea sells it, black bean pasta is really good, and loaded with protein, fiber and iron. Mushrooms are a great source of vitamin d, ironically enough. Breaded, fried tofu is a decent replacement for mozzarella sticks and a good source of protein and vitamin b12 - they are also really easy to make, especially in the air fryer.
