Every time I've tried anything over 40 I've been disappointed. But it's always been at a restaurant, so it always has a blue cheese like taste. Then I've heard to simulate long dry aging, restaurants ACTUALLY USE blue cheese butter and pour it over the steak to "cheat". I'd be interested to see what these taste like, depending on the cost.

Well you gotta know the difference between pellicle and oxidation. Oxidation may look like pellicle, but is 100% safe to eat

It’s called “Dry aging.” The meat isn’t rotten, its not just left on the counter or something, it’s safely preserved. The only ‘inedible’ part is the pellicle on the outside

The meat in this video is from a "Bull". NOT a "cow". Humans eat bull meat. cows produce milk for their calves n for human consumption. Punto
