I save my bean ends along with celery bottoms and onion tops and carrot peels and any other veggie scraps for veggie broth that I can up. Still no waste! I love how you explained about the neurotoxin! I have seen some canners on UTUBE doing "survival" series of canning and I just want to scream at them at the top of my lungs! They are teaching such unsafe methods and people are gushing all over them thinking shortcuts! There is going to be some sick people this coming year with all the new canners and it breaks my heart because you just follow simple steps and research it and its safe. Thanks for the nice chit chat today. It was like sitting and visiting with someone! Nice.

Hello friend ! ;) I'm new to canning ( just made dandelion jelly and crab apple jelly last year ! First time canning . ) i just did tomato sauce & wanted to check w/ you to see if i did it right ! I blanched them & peeled , cored & took the seeds out . Then i added fresh garlic , peppers , onions, oregano , basil & parsley & cooked them for about 30 - 40 minutes & pureed them . I washed my jars & put them in my water bath & boiled them w/ some white vinegar in the water, to keep the nasty mineral deposits off the jars about 30 - 40 minutes . Then i put the sauce in the jars & left 1/2" head space , made sure bubbles were out , cleaned each rim w/ a paper towel , ( used the lids i had let set in almost boiling water from the water bath pot ) & just finger tightened them. Placed them in my water bath pot w/ 1 " of water over the tops , let it come to a rapid boil & boiled for 28 minutes ! Took them out on a towel & covered them w/ a towel & they are sitting undisturbed for the next 24 hours ! PLEASE TELL ME ... DID I DO IT RIGHT ??? GOD ALMIGHTY , I SURELY HOPE SO !???
@LittleVillageHomestead

Yes my friend you did it right, however, I am not sure what recipe you used to get a 28 minute process time. Recipes vary though from 25 minutes to an hour and a half. But all sounded well done.

@@LittleVillageHomestead i just tried to figure it out on my own from watching youtube . Most say 20 minutes after it gets to a rapid boil . Oh ! Plus i added some lemon juice just to be safe ( bottled b/c i heard that the acidity is better than fresh lemons b/c their acidity can vary ) .
