Many new sharpeners make the mistake of thinking high grit = Sharp, but as you gain in your sharpening experience you realise it's a little bit more of a complicated equation of the Sharpening Angle + Steel quality + hardness + Grit+ Stropping and Honing skills of the sharpener are what actually = "Sharp"
You may remember in the video I did on the most common mistakes made by new sharpeners I said, "Never go to a higher grit if your knife isn't cutting at the grit you are at." In this video I want to build on that by showing you that proper sharpening and stropping with even only one low grit belt can produce a crazy sharp knife. In fact in my opinion working at very high grits can be very frustrating to new sharpeners because it's not uncommon to make a very sharp knife less sharp. when you get up in that 2400 grit and up range and the same goes for stropping you can easily dull a sharp knife from over stropping or improper stropping. So when you are starting out don't over complicate it. You don't need a 7 belt or stone sharpening process. 2-3 grits has worked great for me for many years. Yes there are times you may want more but for the general sharpening that will make you good money stick to 2-3 grits. It will save you time and money.

Thank you so much for doing this video. I grew up on a farm where we butchered our own cattle, hogs, turkeys, chickens and like 20 deer every year. When I was like 5-6 my dad showed me how to sharpen our knives with a file and butcher’s steel. That was my job until I got old enough to cut meat. I’ve been sharpening blades for myself, family and customers for many years but most people don’t understand. They see a mirror polished edge and think that is the ultimate edge. Try cutting a chicken breast with it! I’ve graduated through many sharpening styles and files aren’t as good with newer steels so now I use my belt grinder. For kitchen knives I won’t go over 320 grit at all. I’ll still do high grit mirror finish on request but not my norm. Thanks again, keep up the great videos

I came to the same conclusion, always test my kitchen knives cutting food because they what I use them for. The only time I go to higher grits ( more than 320 ) is when I am tuning a cutting edge to prepare fish. Sharpening tools for over 50 years, sharpen to fit your personal use case scenario. We all should celebrate honesty. your videos are much appreciated.

Yep, made the point perfectly. That's why when I sharpen I use a slow speed 190rpm dual side grinder w/ 350 CBN go right to a 600 CBN then a 1,750 RPM leather wheel, finishing on a Marathon rock hard with diamond emulsion. 3.5 minutes start to finish. All guided. Great video!

Yep, I was a bit disappointed when I couldn't get my SJ wheel at 4,000 grit to get knives much sharper than my SG wheel at 1,000 grit could. In fact the 1,000 is only a bit sharper than the SG wheel at 240 grit but the toothiness makes better cuts in some foods like a tomato or capsicum, anything with a resilient skin. Honing and burr root removal plays a big part in not only sharpness but sharp retention too. That's where I've been focusing lately, improving my burr and burr root removal techniques. Great video. What I recognized over the years... The Lower the grit the Harder to remove the Burr IF U wanna do it by Hand on leather or whatever ...

Built the collection over time from sharpening profits. Depending on the need in your area there is usually plenty of business out there for anyone wanting to get into sharpening. I'm not the only game in town where I live here in Alexandria I even have another sharpener just 2 miles away and District Cutlery in DC is known all over the world and only 15 miles away but we all do well. I even purchased a new laser yesterday. My fist fiber laser I have many followers who are mimicking what I do and also finding great success all over the world. It's a great side business or retirement gig and way to make extra money for your family,hobby, trips you name it. It also doesn't take a lot to start it up just one sharpening machine can get you started.

I've been messing around with 120 cubitron. Indeed it gets sharper yet again. Finishing on a leather belt at the same angle pushed it over the top. I use a soft platen. It seems that just using one grit to form the bevel keeps it looking the best and cutting the best in the kitchen. Long live the tooth!!!

1200-1500 grit looks almost perfect smooth with much smaller lines under the scope you can see it's till has that 200 grind when it goes under the scope

I've found that coarser finished knives can work better for cutting things like rope where any kinda sawing motion comes into play, even if it's just gradually pulling the blade towards you as it glides through the cut.

I agree I keep my Mora Knives at 20 degrees and around 200 grit because they cut up cardboard and anything I need to get through fast and super easy and stay sharp. I had to cut some rope with it the other day and it was a joy to use. Low grit and high grit sharp both have great uses but so many get obsessed with mirror finish knives but try and cut a lot of rode with it and you will definitely appreciate what 200 grit sharp can do on task like that

@@ALXSHARPEN I've been making diamond emulsion for a while and it's a game-changer. Cheap as chips (as we say this side of the pond) and works amazingly well. I use hand sanitiser as a carrier coz the diamonds stays suspended and it evaporate very rapidly, plus there's so much available after C19 that I can get it free. I'm interested in your method though just to see if there's an alternative way to do it.

Hmm 🤔. Very interesting, well presented. Certainly things for home sharpeners to think about. Maybe pros too. 👍 Given some of the traits sometimes accepted on your choice of tools here, if I said: **’‘slightly convex coarse bevel” with a “slightly concave fine finish micro-bevel”** could you comment on this structure image that my mind develops? Sheest… now i gotta go buy a leather wheel. 😂 Thanks for your time.

As long as you form a proper apex and remove the burr completely.

I'd avoid anything under 200 though. If you do, dont apex until 200. It'll Also be really hard to remove such low grit scratch patterns.

it also tears up leather strops agree I try not to go under 280 for a knife I would use if I did i would remove it with a Paper wheel or hard felt
