Vegetable Soup
1 lb. stew meat, chopped
1/2 large onion, chopped
1-2 Tablespoons of olive oil
2 Tablespoons butter
2 - 15 oz. cans green beans, undrained
2 - 15 oz. cans corn, undrained
1 - 15 oz. cans peas, undrained
2 - 28 oz. cans diced tomatoes
2 cups peeled and chopped carrots
2 cups peeled and chopped potatoes
salt and pepper to taste
onion and garlic powder to taste
Italian seasoning to taste
In a large stock pot, add oil and butter along with the stew meat and onions. Cook over medium heat until the meat and onions are well done. Then add all the other ingredients. Let cook on low for 30 minutes. Taste and adjust seasonings accordingly.
Chicken Soup
2 Tablespoons olive oil
1/2 large onion, chopped
2 cups of carrots, peeled and chopped
1 cup of celery, chopped
2 cups of cooked, chopped chicken
2 - 4 quart jars of broth
6 cups of water
salt and pepper to taste
onion and garlic powder to taste
Italian seasoning to taste
Better than Bouillon, if needed
Add the olive oil, onions, carrots, and celery to a large stock pot and cook over medium heat until onions are translucent. Then add the chicken, stock and water. Bring to a boil. Add all the seasonings, tasting as you go. Reduce heat to medium low and let simmer for about 20 minutes.
