When I was in elementer school, we had this Thai janitor. A very beloved lady and a strong spirit as well! Once a month, the principle asked if she could make us, all the 75 students (small school), fried rice. She was thrilled that we all absolutely LOVED her food that she grew up with in Thailand. The first time she made this, she started to cry a little, as when she grew up, after she moved to South Franch first as a child, she was made fun of for her culture by asshole kids. And such things leave scars. As a adult, living now in Norway, she challenged her scars and made so delicious food for closer to 100 people, including the teachers. Seeing a grown lady grow as a person was just magical, as she was this lady who was hard working, insanely smart, compassionated and just a whole lot of joy to be around.
