I made this SPICY relish with Zucchini.
Kuchela is a hot relish of the Trinidadian cuisine. It is a mouth-watering food condiment that's easy to make with just a few simple ingredients and will keep for a few weeks. #spicy #condiments #recipe
Ingredients:
1. 2 cups shredded zucchini
2. 1 cup extra virgin olive oil
3. 8 cloves garlic (grated)
4. 3 tablespoon amchar masala
5. Scotch bonnet peppers
6. 1/2 tsp cumin powder
7. 1 1/2 tsp sea salt
8. Scallion or bandanya
Wash and shred the zucchini
Squeeze out the excess water using cheesecloth or clean kitchen towel.
Place parchment paper on a baking sheet and spread zucchini evenly.
a). Place in direct sunlight
b). Low heat in the oven OR allow it to air dry for several hours
Blend together garlic, scallion, peppers
Add amchar masala, salt and cumin to the zucchini. Mix thoroughly.
Warm the olive oil on medium to low heat. Add garlic & pepper mixture
Bring to a gentle boil and then lower heat. *Simmer for 5 minutes
Add the zucchini. * Mix well then simmer for another 10-15 minutes
--- Do your final taste for enough salt.
Remove from heat and let cool for about 25 minutes before storing in a clean jar.
