BROCCOLI & CHICKEN CASSEROLE:
Ingredients:
3-4 TBS olive oil
1/2 large onion, diced
1lb boneless skinless chicken
1-2 cloves of garlic minced
Salt/pepper
1 cup uncooked long grain rice
3-1/2 to 4 cups chicken broth or stock
2 to 2-1/2 cups broccoli florets cut into bite sized pieces
2 cups grated cheddar cheese
How to make it:
1. In a large pan heat on low, some olive oil & then add your onions & saute for a few minutes until they start to soften.
2. Once onions have softened, add your chicken to the pan & turn the heat up to medium. If you're using left over chicken, your just re-heating the chicken at this point. But if your chicken is uncooked, season the chicken with salt/pepper & brown the chicken pieces.
3. Add the garlic & mix well.
4. Push chicken mixture to one side of the pan & drizzle the other side with additional olive oil.
5. Add the uncooked rice & saute for a couple of minutes.
6. Add chicken broth to the pan & mix well. Bring to a boil. Lower the heat to a simmer, cover & cook for 12 minutes.
7. Add broccoli florets, & season with salt/pepper, mix well. Re-cover for an additional 8 minutes.
8. Remove from heat, stir in 1 cup of the cheddar cheese, mix well. Sprinkle remaining cheese on top & cover for two minutes.
HOMEMADE BISCUITS:
2 cups all-purpose flour
1 Tablespoon baking powder
1 Tablespoon granulated sugar
1 teaspoon salt
6 Tablespoons unsalted butter very cold. I put mine in the freezer for about 20 minutes.
¾ cup whole milk or buttermilk
How to make them:
Preheat oven to 425F and line a cookie sheet with nonstick parchment paper.
Combine flour, baking powder, sugar, and salt in a large bowl and mix well.
Grate cold butter into your flour mixture, mix & combine until you have small clumps of butter coated in flour.
Add milk, use a wooden spoon or spatula to stir until combined (don't over-work the dough).
Transfer your biscuit dough to a well-floured surface and use your hands to gently work the dough together. If the dough is too sticky, add flour until it is manageable.
Once the dough is cohesive, fold in half over itself. Rotate the dough 90 degrees and fold in half again, repeating this step 5-6 times but taking care to not overwork the dough.
Use your hands (do not use a rolling pin) to flatten the dough to 1" thick and lightly dust a biscuit cutter with flour.
Making close cuts, press the biscuit cutter straight down into the dough and drop the biscuit onto your prepared baking sheet.
Repeat until you have gotten as many biscuits as possible. Reworking & flattening the dough until you can't get anymore biscuits out of it.
Bake on 425F for 12 minutes or until tops are beginning to just turn lightly golden brown.

When I saw Parker doing cursive I was impressed. Public schools here quit teaching it. I haven’t even planted my garden yet. Storms after storms. Making butter. Way better than store bought butter. Joe the pantry is looking good.

In Europe we still learn cursive, my brother’s kids are in grade school in Hungary and they still learn it. A really good exercise for fine hand movements.

I bought a counter top ice maker a couple years ago, GAME CHANGER. I absolutely LOVE it. Ice cube trays in the freezer, ya right, the food takes up way too much room. Parker is becoming quite good at being the camera man. We've owned horses for decades. All my kids had riding lessons. It is amazing how natural Parker already is looking in the saddle. He is for sure a natural at it. SO happy to see him with the interest in riding. It becomes a passion that is part of his soul. Joe cant be denying his soulful needs!!! LOL It is one of the healthiest passions one can have and develop when young. Let him earn it. < JOE! Keep massaging Tina. It is a beautiful thing to watch your child fall in love with their horse

I was surprised to see the cats outside. I know you keep an eye on them. I'm sure they enjoy the time with nature. My four are trained to stay at the front door when it is open but I have to keep reminding them they cannot go outside anymore. A sick animal (maybe a racoon) must have left a gift on the porch and our black cat got sick like really bad. I call it kitty covid. The little girl was also sick for weeks. It just seemed to hang on. I used to let them on the porch, but now I keep them inside. I want a catio for them some day. Got to get my guy on board with it. He says okay but not right now. So I also want to say how I love the bird feeders and flower boxes. Nice touch. Hope you all have a wonderful summer. I'm sure Parker is looking forward to the break as you must be too. Tina, you're bucking the education system-- teaching Parker cursive.. GOOD FOR YOU.. My grandson just finished 6th grade- I think they are the same age. He had a struggle with Agriculture but pulled off A's in class and wound up with all A's--- so of course Papa rewarded him with $50.. And his sister was also rewarded her Freshman year at UNF for making the Dean's List-- don't know where they got their smarts.. Hola 👋 from New Mexico 🌶️....It was so funny to see Rusty going thru the mud, going after the duck and I'm thinking he has a lot of licking to get his feet and legs clean. 😂 All the wild flowers and your flowers you and Parker planted are so beautiful. Awesome video Tina....for your ice maker...as it makes ice put it in a zip lock and throw it in the other freezer so you always have it on hand. That dinner looked amazing as well! Gloomy and raining here in Washington, too. I count it as a blessing. The forecast for our summer shows drought. Water is our blessing this week. I am just glad it came after all the fruit trees, bushes, and berries have blossomed and set fruit. Love all the progress. That pantry is going to be amazing!! You guys rock! Yes! It is time to move the bottle holder. She hit a growth spurt for sure. Went from 14lbs to 29lbs! We just weighed her yesterday!🫶🏻

You have a really nice house it has come along way, Joe is an excellent Craftsman. I see a code violation with the electrical wiring, it mat save you from an electrical fire some day. Any electrical connection has to be in a metal box with a bonded ground to the box. This keeps any sparks from igniting the walls or ceiling in case of a surge or a failure in the system, it helps the breaker trip faster using the ground wire. Many older homes are lost to electrical fire for this reason. They make surface mount pancake boxes for the ceiling , and surface mounts for the wall.
