Made the scalloped haddock last weekend for friends who raved about how tasty it was. Definitely make it again, totally delicious.

I dont know where her cooking got such a bad reputation she was thoughtful of cost and made simple food which was a little grand, especially for the drabe post war diet which in nz where I grew up was roast meat and three veg. The vegetables cooked until they made a squelching sound when served

It fell out of fashion. The gaudier presentation that Craddock was known for was swept away in the 1980s by the Nouvelle Cuisine movement, with fresher flavours and more minimalist presentation. Although even now nouvelle cuisine has fallen out of fashion, a lot of Craddock’s dishes are still viewed through the less of being very overly complicated and out of step with the reality of a modern life where the “housewife” is an outdated concept (for example, who has time nowadays to turn hard boiled eggs into swans, piping the wings out of mashed potatoes and making the necks out of pipe cleaners?)

@@billydeeuk in her defense even housewives when they were HOUSEWIVES didn’t make swans out of hard boiled eggs as a normal thing but people entertained more often and more formally then. Most of the things Ms. Craddock does, presentation wise, is for more special occasions. I mean let’s face it she was an Edwardian woman with Edwardian sensibilities (and a staff of her own to do these things for her).
