My brother mails me Pueblo chillies twice a year from Colorado. They are awesome! A bit hotter than the hatch chillies but still wonderful flavor.

I fell in love with Hatch Chilies years ago. Every year at harvest time they have a roasting station at our local grocery store. I usually buy 3-25 pound boxes and they roast them for free in the parking lot. Its an annual event for me and my daughters to bring them home and peel the roasted chilies and put them in quart freezer bags. Hatch chilies,by far, have the best flavor. And they come in a variety of heat levels. From mild to Xtra hot. I agree with you on the pork shoulder. It’s the only thing to use if you want tender delicious pork chili. No beans in my green chili stew. I do use some russet potatoes though. 😋

The third choice they will offer in NM is “Christmas” which is 1/2 red half green. To me, that is the way to go!! The choice is starting to make it’s way into AZ and TX.

I grew up with Hatch Chilies out in New Mexico, and to me they don’t have too much heat, but they have the absolutely best flavor of all chilies. We used to also make Chili Rellenos with them and roll them in a tortilla and eat it like a burrito. 👍

FYI. Legislature in NM passed a memorial, official State Question, "red or green". The answer is Christmas, i.e. both. Also this year the Legislature passed another memorial, official State Smell. That is the roasting of the green chile.
