That looks so good, Kent! I'm on my way to the store and will try this for dinner tonight. Just to let folks know. I've tried at least 50 recipes from this channel and loved every one of them. They're so good that when I do, I have to make double batches and feed the neighbors. They get their requests in when they smell it cooking. Nothing, IMHO, beats a good, hearty chili or stew on a cold, wet, winters day. I fondly remember being half frozen from shoveling the driveway, to come in and enjoy a hot filling meal. And you want something with a lot of moisture in it, because the cold dries you out something fierce. So soups and stews are a must.

My wife is from New Mexico and we always cook this with potatoes in it and the meat is cubed not shredded. The hatches are definitely a must. We leave out the tomatillos. It would probably taste good with Hominy too, but I haven't tried that.

Of course!!! You cook actual “Chile Verde”, a traditional New Mexican dish made famous in the US by the Ortega family, which uses the pride of New Mexico, from famed horticulturist Fabián García in 1913: The 'New Mexico No. 9' chile pepper. Otherwise known as “Hatch Chili”, “Green Chili”, “Anaheim Chili”. Kent is cooking a dish from Mexico called “Puerco en Salsa Verde”. Apples and oranges. The two dishes taste completely different. This video is ignorant and insulting.

Made this tonight for dinner and it’s a hit. I used some pulled pork that I had canned, and turkey stock I made from thanksgiving. This will definitely stay in our winter rotation of meals.

Ive been making it about once a week for the last five years since i moved to CO, its also a great summer dish too. Lil extra kick of heat gets ya sweating but you'll be chilly in the dry desert breeze. Would not recommend as a summer dish in humid areas, you just gonna be sweaty and sticky, and spicy all over. Its a relatively simple dish to make, prep is mainly dicing pork and mincing chiles, quick sear on the pork, make a roux, add the greens and stock and simmer. Lots of good recipes online outta NM and CO.

I grew up north of you a bit in Missery..... That 'Finer than Frog's Fur' I swear I heard it from my dad or my grandpa. Dad said he had never heard it before. Who knows where I heard it from. Way down yonder by the paw paw patch or tree, can't remember. They are supposed to be good, but I wouldn't know one if it fell on me. We don't speak English, we speak American..... Well, in our house in New Mexico we roast three 20 lb bags of chile every season, peel it and then freeze it in quart ziplocks. There is always a bowl of Caribe(diced chile with onion and garlic) to add to whatever you’re eating, especially eggs!

This is very similar to Mexican Chile Verde. The biddest differeince is the cubed pork and onion. I also didn't see cilantro and lime, but I imagine it being in there.

I'm very excited Kent, this friday i'm getting my very first beans, in my entire life. That's right I never ate beans but because of you i'm obsessed now, I wanna eat beans. I will be growing my own this summer but for now its frozen here in Canada so I bought all kind of beans at the grocery. I'm not sure but I think i remember you saying in one of your video that cowboys back in the days were eating Pinto beans when traveling. That looks so delicious, especially for a winter warm-up meal! I love green chiles and tomatillos, especially when they're roasted-- deep, tangy flavor! Is it dinner time yet?
