Yea, it’s actually been pretty encouraging and amazing to make connections and build community but there are most definitely days when I want to hide.. okay maybe like weeks. And I think it’s all okay. It’s a growing experience and I am learning as well as sharing what I have learned through my life.

Unfortunately, I was unable to find the mix in a gluten-free option and, by the time I made it home to cook or bake (I live no less than 16 miles from any grocery store), I was more tired than anything else so went straight to bed. All was not lost however..fortunately, i did have myself a gf buttermilk pancake mix..I look forward to making a version of coffee cake with that ~Nine

If you can find fresh local eggs that haven't been cleaned, you wouldn't need to worry about keeping them cool. One of the additional side benefits of finding someone with fresh eggs. I know that's probably not the easiest as you're traveling around, but if you see someone with them, they keep for quite a while. Also, the Krusteaz GF Blueberry Muffin Mix, bang-a-rang. So delicious!
