Aspic, known as holodets in Ukraine, is a traditional dish with a long history. This cold, savory jelly is made from slow-cooked meat, usually pork, beef, or poultry, and set with the natural gelatin released from the bones and cartilage. The origins of aspic in Ukraine can be traced back to ancient times when preserving food was essential for survival during the long, cold winters. In rural areas, families would prepare and store meat in the form of aspic, which would keep longer due to the gelatin's protective layer. The key to making a delicious aspic lies in the slow and gentle cooking process. Meat is simmered for several hours in water with vegetables and spices, allowing the flavors to meld and the gelatin to be extracted from the bones. Once cooked, the meat is shredded and arranged in a mold or deep dish, while the broth is strained and poured over the meat. The mixture is then left to cool and set, resulting in a firm, jelly-like texture. Traditionally, aspic was a resourceful way to use every part of an animal, ensuring that nothing went to waste. Over time, this humble dish gained popularity and became a staple at festive gatherings, family feasts, and holiday tables in Ukraine. Nowadays, aspic is often garnished with sliced hard-boiled eggs, carrots, and herbs, and served with condiments such as mustard, horseradish, or sour cream. The dish remains a beloved symbol of Ukrainian culinary heritage, showcasing the ingenuity and resourcefulness of its people throughout history.

Zero processed foods. I prepare all my meals every day from scratch. I thought I would feel burdened by this but I enjoy every minute of it. I love elders too! I am currently living on the farm of an elder I cared for here. My children are grown and I am divorced and I loved every minute here with a fierce and fun loving woman. She passed and the farm has sold and as soon my elder dog passes, I am sincerely interested in visiting other women living such lifestyle. So much to learn and so much to share. Maria se ve que tuviste una gran madre muy trabajadora y te enseño muchas cosas, sabes hacer infinidad de oficios, fabricas tus mantas, manteles, cojines, haces las madejas de lana, alimentas tu ganado, ordeñas, fabricas el queso, la nata, la mantequilla, el pan, cultivas las hortalizas, las conservas, asi como la carne, tocino, con la fruta haces mermeladas, conservas en almíbar, y con tu prodigiosa harina haces panes de todo tipo, pasteles, eres increíble!!!! Cuanta sabiduría en una sola persona, y cuanta bondad para dedicar tu tiempo en preparar alimentos cada dia para tus seres queridos. ❤ Dios te bendiga a ti y a toda Ucrania ❤❤❤

Liebe Maria, seit geraumer Zeit sehe ich Ihnen schon mit großem Interesse beim Kochen, Weben, Tiere versorgen zu. Sie sind bei jeder Ihrer Tätigkeiten sehr geschickt und talentiert. Ihre Gerichte sind mit selbst angebautem Gemüse, konserviertem Fleisch usw. sehr appetitlich und ganz sicher köstlich. Die Landschaft, in der Sie zuhause sind ist wunderschön und ich hoffe, dass Sie dort sicher leben können. Ich bin tief beeindruckt von Ihren großen Geschick und freue mich auf jedes Video von Ihnen. Ich koche auch jeden Tag mit möglichst frischen Zutaten für meine Familie abwechslungsreich. Ich konserviere vielerlei Obst im Sommer, koche Marmelade und stelle Obstsäfte her. Gurken, rote Bete, verschiedene Suppen und Gemüse stehen im Keller. Aber besonders gerne backe ich mein Brot selbst. Aus Roggen-und Dinkel mit Sauerteig. Ich kaufe kaum Brot beim Bäcker.
