There're many kind of Namprik. My favorite is my own recipe of Namprik Pla To (Pla To is Mackerel), but instead of Mackerels, i use Salmon. So, it's Namprik Pla Salmon now i guess? Salmon has that richer taste to it, sweeter too. Mackerel is higher on the salty note. It came out great. I never change it back to Mackerel since i tried experimenting. I've also tried Tum Berries, Laab Tuna. Laab Tuna came out great. I love that better than the traditional pork for sure, but the Tum Berries however.... Let's just say the berries are better as a side character for the salad than the stars of the show. So, i use them instead of tomatoes in a normal Som Tum. I'm not a chef by any means. I just love experimenting with food.

Thais orders rice to neutralise the hot chilli spice. The raw vegetables or salad also neutralise the hot spices. This is why cucumber is served with most hot dishes. When you eat the heat on its own, your comment, "It's a bit spicy," is not really fair. Thais even spoon Tom Yum (spicy hot soup) over rich as a sauce, they know to moderate the acidic burn. Thais are too polite to tell you that eating hot spicy dished on their own, will burn going in and burn coming out. 🔥🤬🔥
