Oh my gosh we got summer lilac sprouting around our yard as a weed and I’ve been LOVING the beauty they add. They got bright orange eyes that call attention, so ima make some ‘eye candy’ ;) thanks for sharing your knowledge!

I made lilac jelly last year and it was simply divine! Our lilac bush is very light and neighbour's are darker. It sure smells lovely in the Spring!

Update. I got some darker lilacs from a friend. So I made 2 more batches and had enough flowers left over to make a small batch of tincture. Trying that out. A question to the channel producer. Do you hot water bath your jellies? I've never done so following in the footsteps of my mom. She didn't do hot water baths for jams or jellies. I called the company that produces the snap lids and apparently a hot water bath is necessary now. I think the snap lids are a cheaper quality than years ago. 🤔

In my kitchen that foam is the chef’s treat 😆. I love making jam I’ve made so many different types but lilac is this year’s new try! Yes it’s a lot of sugar but that’s what not only preserves it but what helps it gel. I do have a question though the mug you were using is more like 2 cups measurement wise.

Wonderful video. Just to note that if you are adding lemon slices it will have a lemony flavour to the syrup. If you want pure lilac I would suggest adding only lemon juice or citric acid. I only needed the juice of half a lemon for this recipe. Or use 1/4 tap of citric acid for every 3 cups of liquid.

Does the lemon have any effect on the color beause of ascorbic acid? Mine was completely brown like apple juice. It tastes somewhat like it. I would call it a "tea". The flowers lost their color and boiled down to white. I didn't have lemon because I can't buy any fruits. These plants grow everywhere in old allotments without tending. The dark red ones bloom later. You don't need to ask even. Use small wire cutters that you can carry in the pocket or scissors to cut neatly.

I've seen other recipes/videos for lilac syrup and other syrups and they say they will last in the frig for "several weeks" or "a couple of months" or things like that. I see that you have syrups sitting out on your counter. The rose hip one looks like it is not sealed but opened and it is a year old. So can they be kept out of the frig and do they really last a whole year? How long does it last once it's opened? Can you can it in a water bath to keep it for years much like maple syrup?

It's difficult to keep the colours mainly from the heat. As long as you don't heat it too much it should stay pink 🙂

Most flower syrups don’t last too long unfortunately! Store them in a fridge on top shelf and they should last you a few weeks :))

something really weird has happened with all the teas ive had this honey with so far...the colour of the tea always disappears! some strange neutralising chemical reaction that makes the tea look like water

Lemon will change the color of most flower pigments because of ph change. Just add a spoon of lemon juice.
