Instead of butter you can use margarine very well. If you want to make the filling without eggs, you could perhaps make a lemon pudding with vegetable milk and cornstarch? That should work as well, I think.

Thank you for your support to this point! The green is a jelly of lemon balm. This is an herb that tastes a bit like lemon and mint. Do you know it in Japan?
