Because cos(theta) by definition is the length of the base divided by the hypotenuse of a triangle. This is from basic trigonometry we all learnt in high school.

Why cos, why don't we use sin in finding the dot product?

As per trigonometry Cos should be if your adjacent to Thetha, and Sine for opposite..

This is maths. I don't know after working with 4 generation programming language for 8 years, I will be able to grasp this much maths. I don't agree with your website's claim that anyone can learn machine learning. The only ones that can learn are bachelor or masters of mathematics and that's it. I don't think a commerce or it graduate will grasp this much maths
