Anything that grows where the flower was, is a fruit. So yes, that includes courgettes, aubergines, pumpkins, tomatoes, bell peppers, chilis, olives, cucumbers, beans, etc. Anything that is part of the plant itself is a vegetable, so roots (eg carrots, onions, garlic), stalks (celery, bok choy, broccoli), leaves (spinache, leafy herbs, cabbage) flowers. This last one is interesting because courgette flowers are eaten sometimes (watch mr. Oliver deep fry these) - which is a part ot the plant and thus a vegetable. However the fruit is also eaten. So yes, vegetables have fruits!

Hopefully they don't watch Gordon Ramsay's video for that since Ramsay doesn't know that you don't use a honing steel to sharpen a knife. Edit: also, the sharpener Rhett uses is fine. It takes off more steel than stones would, but stones are lot more work to set up and learn to use

When you scrape off any chopped “stuff” off of the cutting board, make sure to use the full side of the knife to help keep the knife sharp!!

They aren't pointless, though.The horizontal cuts are essentially doing the same thing as the vertical cuts but for the sides of the onion, because the layers are curved. If you don't do the horizontal cuts the dice will be uneven. Does this matter in everyday home cooking? Not really. But in a restaurant kitchen it does matter, which is why someone like Gordon Ramsay uses the horizontal cuts.

they're different techniques for different reasons. Cutting horizontally twice leads to more evenly diced onions which is relevant for restaurant applications: that's why most chefs you see online will teach you this technique. For home cooking however, a little uneven dice doesn't matter at all :)
