Please, continue to stay as healthy as possible and to not push yourself too much. I decided to make some brownies yesterday, and they turned out very good. I usually make cookies, but I wanted something more chocolate flavored. I bought tickets to a convention that is happening in April in a city 3 hours away from where I live. I didn't know, for the longest time, that you could cook iceberg lettuce...then I had a recipe that calls for it, at the very end of cooking this dish...it really made the dish. I've always thought of iceberg lettuce as for salads only, but after that, I add it to my stir fries and other things too. I agree with the chicken soup, especially with garlic & ginger in it too...great for healing. All of your cast iron cookware really gets used every day...such a wonderful, practical investment. I'm so happy your chocolate muffins turned out so well...the boys wanting one more was your reassurance that they were a total success. My daughter likes those peas as well. she is also happy to gave them as a snack :) Those caramelized nuts also go great in a salad. I usually melt the sugar, water and butter and then turn off teh heat and add the nuts. easier that way I think. It works with anny nut; hazelnuts are great that way too. I never used them in baking though. Perhaps I should try adding them to a cake sometime.

The muffins look good, however, normally when you carmalize you melt the butter first, then add the sugar and a touch of salt, then add the nuts and mix them into the melted butter and sugar. I'm glad they tasted good.

I’m glad you’re starting to get back to normal. It took me forever and I still don’t have my sense of smell back!! And my nose won’t stop dripping!! And that was over a year go!! England is very expensive now. We haven’t seen my parents as they have COVID so they won’t meet the baby this time. Which is a shame. So we have gone on to our next destination early. And are just going to stay there until we return. I just can’t believe the price of food. It’s ridiculous. I’m glad I brought dry food from home and remembered the cheap and discount stores or we would have been in serious trouble. I’m missing home already!!
