Hello, everyone! I'm back in my kitchen with an exciting recipe for you. Today, we're making something truly special from the streets of Bihar: Litti Chokha! 🌶️ This dish is famous for its unique, bold flavors, and I'll guide you step-by-step to create the perfect crispy Littis filled with a roasted gram flour mixture, paired with tangy, smoky, and spicy Chokha. 😋
INGREDIENTS FOR LITTI DOUGH:
Wheat flour 2 cups
Semolina (Suji) 1 tbsp (optional)
Ghee 2 tbsp
Salt ¼ tsp
Baking soda 1 pinch
INGREDIENTS FOR CHOKHA:
Aubergine /Brinjal / (Black bharta baigan) 200 gram
Tomato 2 medium size
Garlic 7- 8 Cloves
Green chillies 2
Potato 1 (parboiled)
Finely chopped onion ¼ cup
Chopped green chilli and garlic 2-2 tsp each
Chopped coriander leaves 2 tbsp
Salt to taste
Mustard oil 1 tbsp
INGREDIENTS FOR LITTI STUFFING:
Roasted gram flour (Sattu) 1½ cup
Chopped onion ¼ cup
Chopped coriander leaves 1 tbsp
Chopped green chillies 2 tsp
Chopped ginger 2 tsp
Chopped garlic 2 tsp
Lemon juice 1 tbsp
Carom seeds ¼ tsp
Kalonji ¼ tsp
Roasted cumin seeds powder ½ tsp
Mustard oil 2 tbsp
Mango pickle masala 1 tbsp
Salt to taste
METHOD:
1) LITTI DOUGH: Combine all the ingredients for litti dough. Bind it in to a medium tight dough using required quantity of water. Keep it covered for 10 minutes.
2) CHOKHA: To prepare chokha, apply some mustard oil on baingan and tomatoes. Roast Aubergine and Tomatoes till they turn soft and their skin starts separating. Roast it from all sides. Also roast green chillies and garlic cloves on gas flame. Peel Aubergine, tomatoes and boiled potato. Add roasted green chillies and garlic in it. Mash them together. Add chopped onion, garlic, green chillies, coriander leaves. salt and mustard oil. Mix it well. Place a small metal bowl in the center of chokha. Keep burning charcoal in the bowl. Pour 1 tsp mustard oil on charcoal. As charcoal starts smoking, cover and keep the chokha for 2 minutes to absorb the smoke flavor.
3) CHUTNEY: To prepare the chutney, chop tomato and add all the remaining ingredients for chutney in it. Grind it little coarsely.
4) STUFFING: Combine all the ingredients for stuffing with little water and mix well. Take a lemon sized ball of litti dough. Flatten it on your palm and put a good quality of stuffing on it. Cover the stuffing with dough and make a smooth ball. Same way prepare all the litties.
5) ROAST THE LITTI: Heat an appe pan. Grease it's molds with oil and rub with cotton cloth. Put litties in appe molds and roast them over low heat. Keep turning the litties in between for even roasting from all the sides. As the litties turn a little red and crispy, remove them from the appe pan. To give litti tandoor roasting effect, roast litties on gas flame same black spots appear on litties. slightly press and break the litties and deep them in Desi ghee.
Serve hot litties dipped in ghee, chokha, chutney, sliced onions and lemon.
