Chole Biryani
Ingredients:
300 gm - Chole ( Washed n Soaked for 6-7 hours )
250 gm - Basmati Rice ( Washed n Soaked For 1 Hour)
2 no - Green Cardamom
7-8 no - Clove
1 Big - Black Cardamom
1 Stick - Cinnamon
1 no - Tej Patta
10-12 no - Whole Black Pepper
1 no - Mace
1 no - Star Anise
10-12 no - Mint Leaves
Salt to tast
1 tbsp - Peanut Oil
1/2 thin Slice - Lemon
Potli:
1 no - Cinnamon Stick
1 no - Black Cardamom
1 no - Star Anise
7-8 no - Clove
1 no - Mace
8-10 no - Whole Black Pepper
2 no - Green Cardamom
2nd Potli
1+1/2 tbsp - Tea Patti
Method:
Take Chole Washed and Soaked ,Keep aside.
Take Rice Washed and Soaked , Keep aside.
Take a Big Vessel and add the above Whole Spices , Mint Leaves, Salt to taste ,Oil, Lemon Slice , Mix and Let Boil then add Soaked Rice , Mix Well then Let Cook for 70%. Remove Spices also then Strain it and Spread in the Plate and Let Cool Completely.
Take a Muslin Cloth and make Potli using above ingredients. Keep aside
Take Muslin Cloth and make another Potli . Keep aside
Take a Pressure Cooker add Water , and add Soaked Chole , Put above both Potli then add Salt - 1 tsp . Mix and Give 5-6 Whistle. Let's Cool Completely.
Birasta:
Ingredients:
4-5 no - Onion Slice
1/4 Cup - Cashew Washed
and Soaked and Grinded into Paste
( Note - 100 gm Birasta then add 50 gm - Cashew ( Soaked )
Method:
Slice the Onion and Fry till Light Golden and Spread in the Plate and keep aside , From Birasta take little and Mix with Soaked Cashew and Grind Together
Tadka:
3 tbsp - Oil
1 tsp - Cumin Seeds
2 no - Onion Chopped
2 tbsp - Garlic Chopped
2 tbsp - Green Chilli Chopped
1/2 tsp - Turmeric Powder
1 tbsp - Coriander Cumin Powder
1 tbsp - Garam Masala Powder
1 tbsp - Red Chilli Powder
Salt to taste
1 tsp - Kasoori Methi
1 no - Big Tomato Chopped
Above Cashew and Birasta Paste
1/3 Cup - Curd
Method :
Take a Kadhai add Oil, Cumin Seeds, Onion Chopped , Garlic Chopped, Green Chilli Chopped , Saute till Golden in High Flame then add Turmeric Powder, Coriander Cumin Powder, Red Chilli Powder, Garam Masala Powder, Salt to taste , Mix Properly then add Little Water and Mix it , Put Tomato Chopped and Mix again ,Let Cook little in Slow Flame then add Little Water , Mix It then Cashew n Birasta Paste , Mix again properly till Oil Seperates , the add Whisk Curd , Mix it .Cook till Oil Separates then add Cooked Chole .Mix it Very Well Let Boil for Some time , Close the Lid and Cook for 7-8 Min
Assemble:
Keep Coal Over Gas , Burn till Red ( For Dunghar)
Take Biryani Pot , Apply Ghee then add above Chole
Put Some Coriander Leaves Chopped
Birasta
Mint Chopped
Leyer Of Rice above
Birasta
Mint Chopped
Coriander leaves Chopped
Ghee
Saffron Water (Soaked for 3-4 Hours)
Rice Leyer
Birasta
Coriander Leaves Chopped
Mint Chopped
Birasta
Biryani Masala
Saffron Water
Give Coal Dhungar and Close Lid for 3-4 Min
Burani Raita
1+1/2 Cup - Curd
Salt to taste
Black Salt
Pinch Red Chilli Powder
1+1/2 tbsp - Garlic Chopped Fried Mix and Chill for Some time.
Open the Lid of Biryani and Serve Hot with Raita
