As a fellow spelling bee kid, knowing your prefixes and suffixes is an absolute blessing. Pseudo-, hypo-, and para- are all common starts to words, so understanding those definitely helped this kid work through his word. He's surely still got talent, too!!!

It's a lot of just combining stuff you already know, and actively using newly acquired vocabulary in the contexts that you already understand for retention. At the same time, it's hard to understand that as a kid, and hearing it from someone else doesn't always actually help- you've got to sort of internalize it. That's why what this kid in the video is able to do is so remarkable still :)

This looks a lot harder than it is. Pseudo is a common root, hypo and para are also commonly spelt the way it is shown here, the thyroid is an organ, and ism is a common suffix. Given the definition, you just need an understanding of word roots and human anatomy to spell pseudohypoparathyroidism correctly. This kid is brilliant for learning all this stuff at his age, but still, this isn't an insanely difficult word.
