Every time I've tried this, one or both of the knots come untied after I trim the ends. I have made sure that the knots were nice and tight and still have this issue. Am I just cursed?

You are not cursed lol. Try the surgeons knot instead. That one might work better for you. Search on KZbin its pretty quick.
