There is this awesome local rancher.. every Christmas he gives each of his kids a whole or half beef (depending on what they can store) and he often plays Santa to local families and blesses them with the same.. Team canned! My mom would start beans in the morning after she cooked some bacon in her pot. Add onion and cook til translucent then add beans and some water or broth to the bacon, grease and onion. They would be on low all day til just about supper then she added potatoes. Slice up a ripe tomato and homemade bread is all you need. Sometimes left over ham or a big ham hock would be used instead of bacon. The best meal in the world.

Here is my corn story….we planted a small amount of corn once just for the fun of it and it grew well. We checked it and decided that the next day would be our big harvest of about 8 ears. We were super excited. The next day we went out and rounded the corner and a raccoon was eating the last ear. He threw it down and ran away fast. We discovered he had picked every ear and taken a bite out of each one and then threw it on the ground. It’s a good thing he ran or I might have forgotten about the possible rabies and choked him . We just thought it was so rude to do that. Another reason that I don’t care for raccoons. I’ll tell you about the raccoons versus our trash cans sometime when the raccoons went to school.

Alternately stir dry ingredients and the milk into zucchini mixture, including the nuts as a last addition. Pour into a greased & floured 10 inch tube pan or Bundt pan. Bake in oven at 350 degrees for about 1 hour or until wooden pick inserted in center comes out clean. Cool in pan 15 minutes. Turn out on wire rack to cool thoroughly. Drizzle glaze over top. Cut into thin slices to serve. GLAZE: Mix together 2 cups powdered sugar, 3 Tbsp. milk and 1 tsp. vanilla; beat until smooth. I like to replace a tablespoon of the milk with 1 Tbsp. orange juice.

I love me some canned green beans. We like to add some bacon grease when having for dinner. Cook those beans until the water is almost gone, and you will get a super Southern side dish. In the South, we like them cooked for a long time. Sometimes, I clean my cabbage, wrap the whole head in a paper towel and put it in a zip lock bag, and put them in the refrigerator. They will keep for a long time.

Your garden with flowers looked especially pretty today - when you got the wagon and went to pull the cabbages. The boquet was really bautiful and those Shasta daisies were giant things of beauty. WOW I kept thinking that if all this color is in your garden, no wonder you love gardening. I began planting flowers in my garden 2 years ago and it changes the 'feeling' that I have while working in it. Have to comment on those hot pads, also. They are just beautiful and adds another thing of beauty into your kitchen, just perfectly. You have a warm and inviting garden, kitchen, and Bunky. So happy for you all.

When I need ice water to cool down veggies, etc, I use the ice packs that you use for keeping a cooler cold. They last longer, and can be refrozen, and I don't have an ice maker in my refrigerator, so I'd have to plan ahead and make ice in my counter top ice maker, or buy ice, which seems a big waste.

Consider adding Japanese Black Trifele tomatoes to your garden. They are a paste shape and heaviest producer I have grown. They are an 80 day grower. Their flavor is so dense and rich of heirloom variety. A few years back my dad and I were making Indian relish which requires 2 qt of ground green tomatoes per batch. I had 6 JBT tomato plants that year, out of those 6 plants we had enough green tomatoes to make 3 batches of drained green tomatoes! There is so much meat to them, and little seeds. I have found them on Amazon as the easiest vendor.

Glad you are keeping an open mind with the canned green beans! I wonder, though, if your using a large amount of salt in the jars might be changing the taste profile of the beans you can? The frozen beans are not salted, where as when putting salt in your jars, it seems a lot, even for kosher salt or flaky canning salt. Try measuring no more than a scant teaspoon of canning salt into your jars. I’ve been canning green beans for 50 years and typically only use 1/2 teaspoon of salt per jar. I am wondering if the seemingly large quantity of salt may be overpowering the bean flavor, which can be subtle. Just a thought. Thanks for sharing your life on your ranch with us. We do enjoy it so.❤

I only like green beans canned. I find that they have a better taste canned. I am from the deep South, Mississippi, and I find that there are different kinds of green beans. I like some better than others. I cook in water or chicken broth with chunks of smoked bacon. I like stir fry and therefore prepare my cabbage, unwashed but wiped clean. I shred in very thin slices and immediately place in gallon bags in the freezer. When I need stir fry, I grab handfuls from the frozen bag. Place in a screaming hot pan with bacon grease and little salt. This cooks in one minute. cabbage keeps well raw for months.
