so to solve buzzing make sure oud strings are in tune together and in perfect pitch. Next check the oud bridge and ensure there arent too many loops on the string. too much tension creates buzzing

As for Taqasim and maqam structure for beginner listeners, I think George Abyad is a good option. Also, Riyad as-Sunbati of course.

Two low bass strings for the bass C course is rare. You might have a FADgcf set on Fa-Fa. Are the first 3 courses all plain nylon?
