Pretty sure a lot of animals can swim even if they aren’t built for the water, like dogs, however, they may not be able to swim well and have a higher risk of drowning.(mantis should be fine though)

Hippos can't swim they can only walk on the bottom of the water Cricket's definitely can't swim, from experience having a pet frog, just getting crickets wet will drown them Snails and slugs can't swim either

Insect breath through “trachea” and it’s located on their abdomen or “chest”. Also the first reason why the mantis jumps into the water is probably that poor thing had parasite. Try to put it in salt water and you might see gigantic worm coming out from his ass 😂
