idk if it'd change the desired texture for this dish, but what we do in our country is to soak the mung beans overnight before cooking, it saves a lot of time and energy. loving your content btw!!

I love munggo also...I cook it all the time. But I replace the malunggay leaves with Ampalaya leaves. Try that, it's also delicious.
