@@sanjoykumarroy canning and dehydrating. I can anything I am able to. Dehydrate anything I can. All of my vegetables and herbs. It's a lot of work but worth the effort. I don't have enough room to grow my own meats so I get them from a local farmer. Grass fed.

I now grow as many radishes as possible year round- they don't grow through the heat of our Aussie summer, unfortunately, but the rest of the year, I can grow lots! I add them to everything, honestly, we rarely we eat them raw. They cook so nicely into anything from thai curry, to taco meat, stir frys, stews, casseroles, and spaghetti bol! The seed is cheap and plentiful, often for a dollar you can be looking forward to 500 plants for your plate, and like you say, the whole thing is edible, so I chop the entire thing into whatever I'm cooking, unless I'm short of greens for my morning eggs or something!! I'm really glad you mentioned eating broccoli, etc, leaves as well. We eat a lot of cabbage, but we don't have the space (or the weather- dry sub tropics!) for year round succession planting, but a couple of good brassica plants can keep you in good hearty leaves for casseroles and stews for a long time. I've friends further south that have been harvesting off the same cabbage plants for three years running now! Excellent video, with excellent tips, because we need to pull every little bit of nutrition out of the hard work we're putting into our gardens!! I thought you might have mentioned the fact that those gorgeous lettuce you have growing are cut-and-come-again veg- drives me crazy when people harvest an entire lettuce, bok choy, or spring onion! What are you doing, crazy person, just take the outer leaves and come back for more every few days until the season kills them!! Maximise that harvest!! Interestingly, too, almost every part of a pea/bean plant is edible also. If you wanted to really force those sugar snaps to go crazy, you could harvest the blossoms and some young leaves for your salad now, so that it puts on further growth, and ultimately, more peas, while you get some nutrition from it now!! We have to get everything we can from those crops!! I find it hilarious that I'm growing the same things as you guys- but there it is coming into spring, and here, it's finally cooled down for autumn planting. Halfway across the world, totally different place to grow, but we're still nurturing the same numnums. That tickles my fancy!

My mom used to make beet leaf rolls in summer once in a while when she made buns. She'd roll about a dinner role size piece of dough into a tube, and wrap a large beet leaf over it and put it in a greased glass baking dish until it was full. Then she'd pour cream over and bake it until the buns were browned and done. Yum!
