Easter bread with cottage cheese😋
200 g cottage cheese (7.1 oz, 9%)
100 g softened butter (3.6 oz, 1/2 package)
100 g sugar (3.6 oz, 4 tablespoons heaped)
100 g eggs (2 eggs)
150 g flour (1/3 lb, 6 tablespoons with a slide)
8 g of baking powder (0,5 tbsp.)
70 g dried cherries (2.5 oz)
🍞Prepare the dough.
1. Whisk the butter, add the sugar and mix.
2. Add the eggs and mix.
3. Rub the cottage cheese through a fine sieve, add the cottage cheese to the main mixture and mix.
4. Mix the flour and baking powder, add to the curd mixture and mix again.
5. Cut the dried cherries in half, add to the batter, mix.
6. Spread the batter into the molds - up to half of the molds.
7. Place in a preheated 340F oven for 35-40 minutes.
Check the readiness of the scones with a wooden skewer.
🍒Berry glaze:
60 g berry puree (2 oz, pitted)
120 g sugar (4.3 oz)
5 g gelatin + 25 ml water (1 tsp. + 5 tbsp.)
🍒Prepare the glaze.
1. Soak the gelatin with water, leave to swell for 10-15 minutes.
2. Mix the berry puree with the sugar, put on a small fire and heat to melt the sugar.
3. Add the swollen gelatin and stir to combine.
4. Whisk the mixture on high speed until it cools.
🍒 Remove the molds and cover with a thin layer of icing.
Decorate with dried cherries and dried flowers.
Leave the glaze to dry for 8-9 hours.
🥄Classic Protein Glaze:
120 g powdered sugar (4.3 oz)
30 g egg white (1pc.)
citric acid (pinch)
🥄 Prepare the icing.
1. Mix all the ingredients.
2. Beat with a mixer or in a food processor.
3. Glaze the marshmallows and leave at room temperature for 20-30 minutes to allow the glaze to dry.
