I don't get it, why have 1 sc after end of each round? Instead of 18 or 24 stitches, I end up having 19 or 25, does the slip knot counts??

No, the slip stitch does not count as 1 stitch

Maybe the last one was the slip stitch one.

The last stitch was a chain 1 not a single crochet. It's not counted as a stitch. You will stitch the single crochet of the next round on the same stitch of the slip stitch
