Another option: use smaller potatoes, bake, split in half, scoop out inside. Add taco filling, or you choice of filling. Top with cheese, and return to over. Add toppings of choice, sour cream, lettuce, tomatoes, green onion, chives, the possibilities are endless. Also, change the filling. Use chicken, baked, boiled, or rotisserie. Ground turkey, BBQ pork would be delicious. ❤

Oh my goodness ,i just saw this and knew what i was doing for supper . i had left over taco meat just half cooked the potatos in microwave finished in the oven ( too heat the house ) . i had the last of my tomatos just ripened. Topped with green onion cheese and green salsa. YOU GIRLS ROCK PERFECT TIMEING !😊😊😊😊

They were huge and delicious. I love the idea of smaller one too. You could cut the smaller potato in half, scoop out some of the inside and fill with taco choices, cover in cheese, return to the oven. Don't throw away the insides, cost in butter or oil and fry. OMG!

I made roast last nite for supper and there are lots of left overs. That might be good to use. I've had a baked potato topped with smoked brisket and a little Bar B Que sauce. Sooooo goooood!!! Never thought of taco meat. I love potatoes and baked is one of my favroite ways to fix them. Thanks.

I bake my potatoes in my slow cooker. Place crumbled aluminum foil on the bottom of your slow cooker. This will avoid potatoes burning. Wrap each potato in foil. I bake 6-8 hr. You can bake 4-6 potatoes. Depending on the size of your dish. ❤🇨🇦
