I used to think that he stole the throne after Odin went to sleep but according to the deleted scenes, the transition of power was not only legal but encouraged by his adoptive mother and the system without loki even asking for any of it . Thor's friends really were acting rebellious to a legit king.

Loki was right. He couldn't undo Odin's curse on Thor, since the throne was only his temporarily, and doing so would have constituted treason on his part. Bro, rewatch thor 1 again with the deleted scenes...loki was a villain, betrayed his family and home first letting those frozen giants to get in , lied his brother about his dad death and attacked midgard. Loki was a villain since start. Still his show is awesome and his change of personality makes sense.

We know that Loki had ulterior motives, but would Odin have changed his mind? Likely not. Odin banished Thor in his wisdom and gave him the opportunity to mature into the hero and leader that he became. Letting him come back home would have been a deleterious move.
