Wow! Used my warmer today on my LSG offset with this (drum) setup and I am hooked. Temps were rock solid and it could not have been easier. I can honestly say the warmer was the best option I could have added, definitely worth the extra expense and for me the most utilized part of my offset smoker.

Great video, Jusitin. I use my warming oven every cook - for heating splits. If I'm cooking in the main chamber, I run the warmer at about 200 and keep it full of the wood I'm using for that cook. That ensures they're nice and dry and ready to combust when I put them on the fire.

I highly recommend hanging your ribs. I have a WSM and a rack that allows me to hang things. 2 Things I do is one leave on the membrane to keep the ribs together. And as an added precaution I but a rack right above the coals to catch it if it does come apart. Which this week one did. Which I was able to save due to the rack.

Hey Justin! I've always felt that the "Warming Box" has been underutilized! LSG has built into their design the additional potential with this vertical cabinet. You are very thorough with the explanation of using Lump charcoal is this stick burner and making note that the dampers need to be almost closed to maintain lower direct heat temps. 👍 It's two different animals we're talking about here, Wood and Charcoal, and the LSG design can accommodate both! Oh......and then there is the Sear Factor that can also be achieved! Gotta say........You got Yourself one heck of a Heavy Metal Pit right there! ;-) Metal On! \m/

NIce! But with the extra space between the hanging meat and the coals, as well as not opening the top like with a drum, gets me thinking about the old vertical propane "smokers" with the on the side "fridge" door - You remember the cheap units many of us had (or still have). But now maybe designed to do it with charcoal/wood. So you could hang or have multiple shelves in a pretty compact smoker dripping on those coals. Someone must have already done this.

I have a 30 inch offset LSG cabinet with the warming oven and have been looking for a video just like this to get me started on using the oven more often. One question, have you tried cooking direct heat using wood instead of charcoal? If so, would you suggest changing how you ran the dampers on the firebox and oven? Also, would love to see a future video where you try cooking some thick pork steaks (1-1.5 in) cut from a whole bone-in pork shoulder. They are popping up more at Texas BBQ places and it would be great to see you cook a few over direct heat in the warming oven. Thanks again for all of the great content!
@BabyBackManiac4 жыл бұрын
I've tried it. You have to do things alot different to keep the fire breathing enough not to smolder. There's probably a way to do it but I'm not sure the juice is worth the squeeze if you know what I mean
