WhatsUp bud? How's this cooker holding up? I've been wanting to get something that doesn't need alot of attention as far as fire management goes, but not a pellet grill, I was looking into gravity cookers but then came across this one and now Idk what to get lol. Do you find it holds temps well on long cooks? Seems like it would. And looks like a solid build

Thinking about buying one but I have a question. How do you clean or remove the built up water/gunk from the stack condensation catcher?

Since you never got an answer I'll take a crack at it. From the research I've done, the water pan is sloped, so I think water / gunk would gravitate toward the drain, and if you put a 5 gallon bucket under the drain valve (would probably be easier to put a 90 degree pipe fitting / spout on the drain) and open the drain valve, the water and gunk will go into the bucket. If you actually need to "clean" it, I think it would be the same process. Close the drain valve, clean the water pan, then open the drain and rinse the water pan / flush out any soap etc. If you know something is going to be particularly messy, like a bunch of chicken thighs, you can always put a drip pan under them to catch all the mess too.

What's the lowest temperature you can sustain for extended periods ? I might be interested in one of these for sausage making, but the temps are in the 120-180 degree range. I like the idea of using wood instead of electric.

Looking at this and the 30" or 24" offset cabinet/vertical smoker. What might push one to purchase one over the other? Can you speak to any key differences?

I get asked this a lot and have had many customers purchase an offset then sell it come back and get the insulated or vise versa. First of all the food will taste the same, same texture, same smoke ring, same bark. What it comes down to and the common denominator for all those that bought one then went to the other was this. If they bought the insulated and came back for an offset it was because they missed messing with thew fire, that interaction was part of the process for them and they missed it. If they bought the offset and came back for the insulated it was because they hated staying up all night tending the fire and smelling of smoke. So if your looking for a true "set it and forget it" then go with the insulated. If you want that hands on "labor of love" then the offset will suit you better.

@@lonestargrillz"Thank you for the detailed response, makes a lot of sense - offset if off the table. I prefer temp and time control to be akin to running an oven. I got spoiled running my Mak Grill for the last 8 years, load the pellets, meat, probes (water if using) and sit back and monitor digitally - too easy. Maybe an insulated cabinet and a Fireboard drive, or the pellet smoker would be best for me. I like the versatility of your pellet smoker; however, I wonder if I am missing something in the flavor department. Do you think the insulated cabinet smoker has a superior flavor and/or bark to your pellet smoker? This might be a charcoal/wood vs pellets question.

@@GeneHouse you can get the same bark on either both our pellet smoker and the IVS, only real difference between the two is that the IVS is just a smoker and the pellet can smoke, grill, and sear.
