Putting your flour through a sifter will break up any lumps in the flour, which means you can get a more accurate measurement. Sifted flour is also much lighter and airier than unsifted flour and is easier to mix into other ingredients when making batters and doughs. Buttermilk is an acidic ingredient, which helps break down the gluten in your baking and created a more tender cake. The way you guys treat your animals says a lot about you. A lot of good things. That kindness is real and can’t be faked. Farming can be hard as you deal with your livestock. It’s good to see you loving on the kids, the animals and the “old farmer”. I say that with affection as I’m 68 and so enjoy those “old farmers” I meet all across my native NC. Hello there happy farmers. We used to get given German Chocolate when we were kids. It's really good Chocolate and there are a lot of different sorts. If you mesere all the ingredients for the cake you can't go wrong. My mum was a confectioner by trade. She made exquisitely beautiful cakes.

Cake flour is a finer grind than regular flour. Sifting aerates the flour, fluffing it up, to prevent clumping.

The reason you layer ingredients is so they blend easier and not fly up from the bowl. Your granny was correct that going in steps is much better than a pinch here and dab there (my mother's philosophy on baking)❣️
