Yes they are scared of Cucumbers, and it is because of they resemble snakes, the same for Bananas. The fact they some cats don’t show fear to it just means that specific cat isn’t as afraid toward snakes as others.

Cats aren't scared of cucumbers, exactly. People get reactions from cats by placing a cucumber near them without the cat noticing. Put the cucumber down in front of the cat while they're watching and they won't freak out. The resemblance to a snake might help, but they're mostly startled from seeing something that wasn't there before, as though it snuck up on them.

The Banette episode in Journeys made me theorize that maybe the very first instance of a ghost type pokemon was someone turning into them but over the course of history, they just became a corporeal part of the world and was able to reproduce and evolve. But they can still create a new ghost type by that original method. It makes sense that the Ghost type mons are not just full on ghosts or spirits in the current timeline. They just embody the ghostly infinity energy.
