Hi Andong! a fun fact is that in China (maybe all over Asia, not very sure) there are 2 types of lotus roots. 7 holes and 9 holes 7 holes is with a red hue and 9 holes is more white in color, of course the cut across surface can tell you the differences at the first second. the difference is 9 holes(the one you use in the video) is more crunchy ,better for stir-fry, hot pot, blanch or raw salad, dishes with a shorter cooking time; and 7 holes type is more starchy, better for making soup, stew, braise etc My favorite Lotus root dish is tea olive(Osmanthus) sticky rice lotus root (as in Chinese: 桂花糯米藕), a chewy, sweet, floral and heartful dessert from the Jiangnan area in China, you should try it!!:)

I work at a cocktail lounge that does lotus root chips we use a mandolin and those chips are bussin!

It's called "Thambou" in our native language. We eat it raw, as an ingredient in salad and also cooked. Sometimes as a garnish.

In the Netherlands in the summer they are cheap. Now they kinda are expensive. I love dishes with lotus roots. I never think of making chips of. I Will save your recipe for then. 😂

You should try lotus seeds too. Really nice and crispy, used in a lot of indian dishes or eaten fried/toasted on their own.

Bought some plantain chips from the asian store today, they were pretty good. I guess you can make chips from a lot of different things.

In India you get chips of many veggies and fruits. Plantain and banana chips are famous. Sweet potato one is good too. But my favourite is jackfruit chips found in southern India. Sweet and crunchy.

i’m japanese and my mom always makes this as a snack. only difference is that she cuts the lotus roots very thin, so that it’s crispier after it’s fried.

I never ever saw lotus root in the store, I'd love to eat some. We don't have Asian groceries here and the aisles with world's cuisine in supermarkets carry the most basic stuff (coconut milk, rice noodles, ramen noodles, mie, nachos, nacho dips, tortilla wraps, sushi rice, nori sheets, if you are lucky wasabi, ginger for sushi or bamboo shoots), so yeah. From fresh produce bok choi is pretty popular, same with sweet potatoes, turmeric root, ginger root, in season lychee and kaki, in one store fresh shimeji and enoki, if you are lucky. One time I could buy taro root and it was delicious after cooking. But lotus? Never seen. 😢🙈

I can only eat lotus root when it's been cut differently due to severe trypophobia. It's absolutely delicious though but I had to look away from the video while I typed this comment.

You should try using a mandoline when cutting stuff into chips. Plantain chips are great and the mandoline works wonders.

Use 'besan' (gram flour) - put chilly spices in it with water.. make a thick batter then coat over it...then fry

Honestly works pretty well with precut frozen lotus root slices if you're so inclined. Just compare the brand's for a thickness you like.

In my household we use it as stir fry and it’s delicious. Sometimes we use it for a stew like with pig feet and beans. Delicious.

I have and I love them. I also have been taking Egyptian Blue Lotus flower for years to manage my paranoia, anxiety, depression and focus. That plant changed my life so much that I got it tattooed over my heart. I tell everyone about it because it helped me and I hope it will help others. Truly a blessing from our mother Earth.

Hi, you should check out Shingju(basically a salad) made with various ingredients including pea flour, fermented fish, chillies, etc. It's a staple from my place and one of the many dishes that holds a place in my heart. It can be made with different ingredients ie the vegetables but we use the lotus roots too. They're delicious.

If you slice it even thinner, you'll get even better texture. From a chef/owner of a small Chinese restaurant. Btw people love the lotus chips, strongly recommend to give it a try if you haven't before

i love lotus root but its hard to find whole where I live, its usually sold in slices of like...5 or so....idk what imma do with 5 slices for $15. I love the taste and versatility of lotus root, the cronch is beautiful!

Lotus root is very versatile ingredient, you can stir fry it, braised it, soup mix, salad mix, deep fry it, you can even turn them into a lotus flour

In northern India it's called Kamal kakdi (Lotus stem). We make it dry and with curry. there's also Nadru Yakhni in the state of J&K.

I’m always sad about not being able to find fresh lotus root at Asian markets in the US😢. Come to any vegetable market in Wuhan. The lotus root we have looks like a piece white jade it’s real pretty. Wuhan has so many dishes with a base of lotus root. I hope you can try some of them one day. My favorite is 炸藕圆 fried lotus root balls❤

We do something similar except we drag the lotus slices through a cornstarch skirt and then deep fry it.

Use a rectangle cheese grader with the wide slot side to cut a more even chip. If too thin just bend the lip out a bit
