Every holiday season up to her death, my mother used to make chocolate fudge with walnuts, peanut butter fudge with peanuts, and white chocolate fudge with almonds. When my parents became empty nesters she would send us home with plastic tubs full of an assortment. I have tried and failed to make fudge as good as hers. One of my older sisters has just perfected the recipe. It's almost like having Mom still around although it's been 21 years.

To whip evaporated milk, everything must be icy cold. Place your bowl and beaters in the freezer and your canned milk in the fridge until really cold. Then it will beat. We did this in home ec. Over 60 years ago. Memories.
