I never thought about making these with sugar substitute, but I will now! We always called these the *1* cookies. 1 cup sugar, 1 cup peanut butter, 1 egg. Done!! I have been making these for at least 40 years now. Good to see them come up again💖

I have these in the oven right now. I made two batches, I’m going to give them to the Medical Transportation company which is a small want to hear where I live so the employees can have some, they are very kind and sweet to me, when I have to go to the store or to the doctor. I am blind, and losing my hearing. But that’s OK God sees me through it all, and I couldn’t be happier. God put it up on my heart to make these cookies for the bus company, and a couple of my friends as well as a couple for myself. Thank you for this recipe. Those who are diabetic can eat these like my sister, and some of the people I know at the bus company as well have diabetes.

Arlene C. 😘 Sugar-Free, Gluten-Free, Peanut Butter Cookies Dry Ingredients 2 cups Almond Flour 3/4 cup of ground Planters Dry Roasted Peanuts 1/4 + cup packed Swerve Brown Sugar 1/4 + cup Monkfruit Sugar Sweetener 1/2 tsp baking soda 1/2 tsp baking powder 1/8 tsp Xanthan Gum powder ( slightly less than an 1/8 tsp. 1/4 teaspoon Pink Himalayan salt Wet Ingredients 1/3 cup Peanut Butter (Smucker’s Organic Natural Creamy Peanut Butter) 3 Tbls KerryGold butter softened 2 tsp vanilla 2 large eggs Chocolate Chip Peanut Cookie Version Add 1/2 cup Lily’s Milk Chocolate Chips 3 Large Eggs (Not 2) Heat oven to 350° Line baking sheet w/parchment paper. Combine all dry ingredients and mix well with whisk. Separately, combine egg, vanilla and butter and mix well. Add egg mixture and peanut butter to the dry ingredients. Stir until dough forms. FYI if that peanut butter wasnt all natural peanut butter(with no sugar added) then it is NOT low sugar. You cant just use regular jiffy or peter pan peanut butter. It has to be just plain peanuts that are grinded down into peanut butter for this to be low sugar. This type of peanut butter doesnt have emulsifiers added thus the oil rises to the top. You have to stir this peanut butter before you use it.(generally every time) The monk fruit is a great sugar substitute though.

That sugar substitute you are using has Dextrose in it, which is another name for white sugar. They do have a new keto formula with just erythritol and monk fruit extract though.

Paula what about dates.. I'm cutting sugar and can't stand the taste of substitute sugars..I'm going to try using medjool dates and almond butter the rest if these ingredients. I love something sweet at times as well without all extra junk.

Yeah I'm all for your cancer survivor and when I was going to chemo radiation there was only certain things I could eat peanut butter was one of them and less sugar no sugar I had to eat fruits and vegetables and certain things so I was happy just to have a peanut butter and jelly sandwich or something with peanut butter and it was great and I still enjoy it till that day even a peanut butter cookie you know that's what I'm saying so I still eat peanut butter to this day and it is a source of protein and it helps you with your sicknesses and everything you go through

According to many doctors that I have spoken to. Sugar substitutes are worse for you than regular sugar. Also diet drinks are also worse for you I was told. They said have the real thing but in moderation and stay away from the artificial sweetners.

I agree. Everything in moderation is the key. I've lost weight, my glucose is in the normal range, (actually slightly below) and my blood pressure is perfect. All this on no special diet, fad, keto, etc. Just portion control.

Someone I know lost 27 lbs in 3 months by doing NOTHING but stopping artificial sweeteners. His doctor told him those are the worst things in the world and that they totally mess up your pancreas and metabolism. This person literally stopped drinking diet sodas, using artificial sweeteners of ANY kind in food or drink, went back to real sugar in moderation and changed nothing else, didn't change the food eaten or the amount, just got rid of the processed sweeteners and lost all that weight and got healthy again from all kinds of health issues. For me personally, ANY artificial sweetener or sweeteners made from something other than real sugar causes me bloating, diarrhea, nausea, stomach pains, rashes, itching, you name it. All that "fake" stuff is not liked by the body. As my doctor told me, "you're like the canary in the coal mine, if it's not good for the body, your body lets you know immediately, not over time."

@@charitys.3862 Hi Charity, hope your weekend is going well. Weather here is picture perfect! Yep, my weight loss journey was/is very, very slow going, but that's ok. Like you said, it's sustainable, unlike fad diets, keto, etc. I honestly think the keto diet is so unhealthy. I bet people on that diet for any length of time are going to develop serious cardio issues down the road. I will be the tortoise 🐢 and take it slow, but I know I feel I am doing this correctly, for me, anyway. Have a good rest of your weekend!!!
