Spice Nut Cake:
2/3 c shortening (I use Palm Oil from Tropical Traditions)
a little over 1 c maple syrup
1 c buttermilk or sour milk (I added lemon juice to milk)
3/4 tsp cloves
3/4 tsp cinnamon
1 tsp salt
1 tsp baking powder
3/4 tsp baking soda
2 c sifted cassava flour
3 eggs, separated and the egg whites whipped
1/2 c chopped walnuts
1.Separate the eggs and whipped egg whites, set to the side.
2.Whip shortening in mixer, add maple syrup, continue to mix.
3.add buttermilk and dry ingredients, mix until flour is mixed in.
4.add in egg yolks and mix well.
5.fold in egg whites and walnuts
6.pour into 2 9” round cake pans that been prepared with shortening
7.bake at 325 degrees for 25 min.
This recipe is based off of the Better Homes and Garden Red and White Cook Book
Cream Cheese Frosting:
16 oz cream cheese
8 tbsp butter
maple syrup to taste (I just added some and tasted it until it was to our taste)
1 tsp vanilla
about 1 c whipping cream
Mix together until fluffy.
