The quality of Polish pastries can be summarised by the fact that Dunkin' Donuts... leaves Polish market. They couldn't compete.

3 Things really 1. Rose filling is considered traditional and most of the time the best. 2. Default, or "traditional" pączek is rose filling with sugar topping with some orange zest. As the bread part it shoudn't be that "filled with air" like those from super markets. 3. Faworki are sometimes called chrust.

This is my grandmother's recipe. Half a liter of hot milk brew half a glass of flour. Pretend it thoroughly. After cooling, pour 4 teaspoons of yeast for baking, dissolved in a glass of hot milk. When it grows, add: half a pound of sugar, 20 yolks and 15 whole eggs. Add a bit of almond oil. Dust all the flour so that the dough is free. Then knead for one hour. The quality of donuts depends on the kneading of the dough. When done enough, pour half a pound of butter dissolved. When the dough begins to grow well, gently throw the flour on the table. Dough the portion. Place a lot of jam on the dough rings. It should be dense and without syrup. Jam: cherry, raspberry, rose or very thick marmalade. Make balls with filling. Sprinkle with flour and place in a warm place on the sieve. When they grow up well, throw them on hot lard!

I saw queues (long queues) outside some pączkarnias this morning and wondered what the hell was so special about those pączki that people were queueing. Places that specialize in serving fresh polish donut are getting more and more popular lately. For example in Łódź on Piotrkowska street, there are numerous such places, where you can buy warm, fresh donuts with many flavours (from classic ones like rose, or strawberry to more unique like cherry with chilli). I'd particularly hoped to find those Polish dairy foods that have no name in English, only to find their processed, low quality versions. Yes, had I spoken Polish, no doubt I'd've (I would have) found them in the countryside; more proof that it's essential to have a Polish guide when visiting.

Yes there's too many unnaturally large size people here in the US. Listen up Poland. There is something called the "curse of abundance" which is what rises when a nation becomes too Westernized/consumerized. Poland has a great heritage and history. But Polish folks are no less prone to this than anywhere else. And now, due to things like smart phones and fast foods, the country may very well become a shadow of it's former self and loose it's identity. Not that improving life is bad. But where comfort and lack of responsibility become strong enough, abuse will be unstoppable. Just something to think about. Thought I'd mention it only because so far as I know, no one else does.

Angel wings ? what a name. As for the ammount of powder sugar who says you can't just get rid of the excess, also bought ones can be way different in every shop. Ones I saw and bought were basically from donut dough and waay too thick. My mom makes those properly.

When I was a kid, there were pączki with poppy seed filling in local bakeries. I'm wondering if they still have them around my hometown. I'm from Śląsk, but now I live in Kraków. Maybe poppy pączki are a Silesian thing and not a very Kraków thing? I miss them sometimes!

Fat thursday is also one of that days, that people eagerly are makeing pączki or faworki on their own, traditionally in their homes. Of course a lot of them will buy'em but if someone is makeing pączki on their own it will be for this ocassion. Also common are "róże karnawałowe" (carnival roses if it makes any sense), which are a bit like faworki.

As to the pączki and faworki on my family, they have always been fried on lard, not on oil. That's an old tradition, but it makes sense. Lard boils in higher temperature and the pastry does not soak with fat. The best way to make faworki is to work in a team of three people. The first one cuts the faworki of raw pastry, the second one fries them, the third one puts the fried ones on trays and covers with powdered sugar. As to pączki, our traditional filling is cherry "konfitura", it may be additionally flavored with rum. But I mean the real konfitura, not the stuff you can get in the shops. You take real cherries, fry them many hours in their own juice and add a lot of sugar, because they are too sour. The flavor is fantastic.

You call it faworki, but in some parts of Poland we call it chrust, and I have no idea which variant is more common. There was an episode of Martha Stewart's show in which she was preparing this stuff under the supervision of her mother. They both called it chruściki. In some parts of the US (Midwest) you can buy pączki on Fat Tuesday. They call them pączkis, which is really odd considering that pączki is already plural.

Those donuts look a little dry. It's better to buy them from a bakery or a donut shop (there's one here in Katowice and while their donuts are more expensive they are way better and always fresh) And since even fresh donuts dry and get hard if left for the night since often more than can be eaten are bought, short 50 seconds on 600W in a microwave, will make water within the marmalade make them nice and fluffy again (though I burned my tongue on that).

the best pączki are from pączki shop or whatever you wanna call it (pączkarnia), people tend to stand in huge lines to get those and be prepared that you gonna wait at least 30 minutes like i did even though i was before opening hour, those are a little more expensive but as i said better! i would say that prices are 3 zł - 5 zł for a one but hell yeah it is worth it, also what’s interesting is that in pączkarnia on a normal, regular day you can buy many flavors of doughnuts - blueberry, coconut, chocolate but on fat thursday they fill pączki with rose of course, strawberry and eggnog, they have to make them few days before because people buy so much of them
