oh my god, okay so i made this and i was kinda scared because i didn't know if i should use the espresso or not, AND im always afraid of using whip cream or egg whites because im so scared of over whipping. BUT I made this for my boyfriend and I nonetheless, and he loved it so much he just had to share it with his parents and i did the same. it was sooooo good and the consistency was perfect !

Audrey Laras In canada we don't really carry heavy cream so I had to use whipping cream the difference is that whipping cream has 30% fat content and heavy cream has 35%. If you want less beating and a lighter mousse then go with heavy cream. Whipping cream is just easier to whip up but they're similar you can't taste or see much of a difference.

I made this to take to a dinner party last night. It was AMAZING. Everyone was fighting over the little cups of mousse. I topped them with a little bit of sweetened whipped cream and a few blackberries + blueberries that I had sprinkled with some icing sugar + lemon juice. Divine!

I had so many problems with this. Nothing went right. First of all my chocolate turned into a thick ball of concrete. I believe it is because the water underneath was too hot. So I did it again and even though it turned out better it still was much thicker than what is shown in the video. Secondly I whisked and whisked and whisked the heavy cream but it never got to the light fluffy peaks like in the video. It just stayed a frothy thicker type of liquid. Also...what kind of chocolate do you use? Just regular chocolate chips or baker's chocolate unsweetened or what?

Water must've went into your melted chocolate. Whipping your heavy cream might just be annoying and you might not be putting enough power into whipping it. Use a mixer instead.

That happened to me too. You don't need heavy whipping cream, and what I did was put it back in the refrigerator to cool every minute or so. This way, It's easier to whip it to the right consistency.

BOYCOTT AMAZON! I make zabaione or sabayon once or twice each week and tiramisu once per week so I literally spend hours beating/whipping/whisking. I long ago sprang for a copper bowl which I keep in the freezer. It will "hold the cold" and make things easier. I use only heavy whipping cream and stick it in the freezer about fifteen minutes before whipping. Using the correct whisk makes a lot of difference. You want what is called a French Balloon Whisk. A company called "Best" makes the best whips. Put your whisk in the freezer. If you can afford one use a bowl stand. That way you aren't using your body parts to control the bowl and heating it up at the same time. Set up your bowl stand. Remove the bowl, cream, and whisk from the freezer. Pour the cream and start whisking. All of what you just did should take less than 20 seconds until you start whipping. Cream doesn't whip linearly. When you start it gets soupy followed by foamy. You will whisk and whisk and whisk and whisk and them you will blink your eyes and there will be soft peaks. From there it's only a short time to stiff peaks. Other people have adequately addressed the chocolate problem.

Hey Laura, Great recipe. I tried it last weekend, however, i don't understand where i messed up. I melted the chocolate with butter and everything but when i added the egg yolk the chocolate became heavy and stiff, and basically seized. I added a small bit of chocolate to eggs and only after added the whole egg yolk but still the chocolate was a mess. Then i tried same thing without the egg yolks and the mouse turned out great. Do you know how to avoid this in the future, or what i did wrong? Thanks!

This is my assumption: The electronic mixer takes away the lightness and sort of, air inside the moose to give it a light texture so that's why she folds it instead of THAT way but I'm just guessing. I COULD be wrong so don't take my word for it.

The reason why she didn't use an electric mixer is because she was making a small portion. Would have had a higher chance of over whipping and splitting the mousse with an electric mixer with that amount. If you were to make a larger batch then you should use an electric mixer. Either or would not matter, just as long are you're cautious.

omg i just cant whip cream to save myself. ive tried it twice and it just doesnt work. my cream just skips past the "perfectly whipped" stage and skip straight to clumping. and once it clumps up the watery milk just slowly starts sipping out. what am i doing wrong? *gets bottled whipped cream*.

you can put the bowl with the cream on top of another bowl but with ice cold water almost like a Bain-marie but instead of hot water you put the ice cold water in this case the bowl with must touch the water and start to whipp

make sure you put your beaters and bowl in the freezer for 30-45 minutes before you start making it. It needs to be cold for it to work!

You're whipping it too much. Once stiff peaks form stop. Whipped cream turns into butter very quickly. If you're making whipped cream add your sifted confectioner's sugar when soft peaks form and whip it fr another 2 to 3 minutes. If you want really thick whipped cream you can add a tablespoon of vanilla pudding mix or unflavored gelatin.

But stiff peak NEVER Formed. It just reaches a watery soft peak, and then I slowed down whipping like one round per 2-3 second, barely stiff and then I start seeing tiny butter chcuks in it when I havent even reach stiff peaks.

make sure you put your bowl, whisk, spatula etc in the fridge for a few hours before your start whipping. Everything should be very cold. If your kitchen is kinda hot, move to another room preferably with air conditioning

My only problem with this recipe is that you give the measurement for chocolate in CUPS, which makes variation very likely. You should give the amount of chocolate in grams. I tried using the cup method but it ended up being way too chocolatey.

I’ve watched this video since I was 9 to the point where I memorized the whole video and can recite it word for word.
