You could always do a crumb-coat first, then chill it, and then frost it again, which can make for a smoother look.

Whoa I have to make this cake. Looks really YUMMY!!! Yes I have a problem when I bake locarb cakes with almond flour and falling apart. What I do is put the cake in the freezer for about 30 minutes so it can freeze up a bit and then take it out so that its easier to frost and not fall apart on me. It seems to work for me.

What do you do about the frosting crystallizing?

I have not had a problem with that with this recipe as long as I use it immediately and not store it. Previously, when I stored it in the fridge and it hardens up, I microwave it for 10 seconds and run it through the stand mixer again to soften it up and make it smooth for use.
