I just made this, YUM!!!!!!! Used sf peanut butter , I SO Pure, and Lakanto maple syrup. Friendship cottage cheese is on the dry side so the mousse was nice and firm. This is a winner for a sweet treat, thanks!

It sounds good. I will have to try it. I also like your cottage cheese cheesecake receipe. I add psyllium husk for fiber which also makes it thicker (you have to add it last after everything is mixed).

Did you melt your peanut butter because you drizzled it in so it wasn’t thick to spoon in like normal ? My hubby will love this!

No I didn’t melt it. I store it in my cabinet so it doesn’t get hard.

I think she is using Kirkland smooth peanut butter from Costco. It easily pours. I also store mine in my cabinet.

I love cottage cheese but my concern is the amount of sugar in one cup. The cottage cheese that is available where I live has 5 grams of sugar per cup.

@ It’s not added sugar, just the naturally occurring sugar, even dry curd cottage cheese.

This is milk sugar, very little impact on metabolism.
