This is a no fuss recipe, you just boil everyrhing! A hearty comfort food that will surely hit the spot when you're not feeling well or just want to eat healthy. It's also an alternative low carb recipe if you miss having Sopas, a Filipino dish.
Ingredients:
About 1 ltr or 4 cups water
1/2 tbsp salt
3-4pcs chicken (skin removed)
Half of small cabbage, sliced
Half of an onion, cubed
Half of a large tomato, cubed
3/4 cup milk (I used evap milk)
Salt and Pepper, to taste
Steps:
1. Boil water, add salt;
2. Add the chicken. In about 15mins check if the chicken is already cooked;
3. Set aside and let it cool down a bit;
4. To the boiling broth add the cabbage, onion and tomato all together;
5. Shred the chicken and add back to the broth; Simmer for about 10mins;
6. When the cabbage is tender, add the milk; You may add more milk if you want it more creamy or more water if you prefer it more soupy;
7. Season with pepper and adjust salt if needed;
8. Turn down flame to low. Once it starts to boil turn off flame. It's done!
9. Enjoy your soup with boiled egg and garnish with green onions.
