I am married to a filipina and she introduced me to chayote years ago. We buy it locally and treat it as a squash and stir-fry with onions, pork, or shrimp, with garlic of course. It has caried the Philippine people through times when rice crops failed due to drought. Kept many from starving. It takes way less water to raise than rice.

Ok, so I just made this and it came out so good! I made a couple of alterations: added sweetener and the juice of a large lemon to the tea water where I cooked the chayote and added a little more sweetener to the mixture that was incorporated to the cooked chayotes (to taste) and added just a pinch (abt 1/8 tsp) of xanthan gum when mixing. Seriously, I could not tell I wasn't eating apples. Wow. Thank you so much for this amazing recipe. 👏 💗

Fantastic recipe. Thank you. In Australia we call them a choko and they have been used over many generations. We use them as a filler with apples in any apple recipe My mother used to fry them like chips or fries also. As they can be used sweet or savoury they are added to soups, casseroles and stews as an extra filler when vegetables are expensive. Here they grow like a weed and almost every household had a choko vine when I was growing up. 🙏🏼🇦🇺

Chayote (Sechium edule) is a type of squash that belongs to the gourd family Cucurbitaceae. It originally hails from central Mexico and various parts of Latin America but is now grown all over the world. It’s also known as mirliton squash or chocho. Chayote is loaded with an array of nutrients and antioxidant compounds that provide many potential health benefits. A whole Chayote only have 9 carbs, 2 fiber so 7 net. Nice

I am from the Philippines and we use chayote as a vegetable .To those who are on keto, it is a good substitute for green papaya for our “chicken tinola.” Another variation is to sauté garlic, onion , tomatoes, ground or cube pork and shrimp and add chayote. Season with salt and pepper and let chayote cooked to perfection, Voila we have some good veggies....

I made a half-recipe using 2 chayotes (instead of 4), which gave me enough "apples" & crumble topping for 4 servings (ramekins, about 4 oz. each). It was pretty good! My husband is not keto and he enjoyed it. If you can't eat apples, this is the next best thing, for sure. Since chayotes take on the flavor of whatever they are cooked in, I wondered if they might make a reasonable substitute for potato salad??

@@keinohrtini the skin is also edible, so it can be eaten with or without peeling. You can just cut it in half, take out the seed, and slice into quarters, just as you would do with an apple. I was taught by Phillipino ladies to cook the Chayote Squash with Chicken and ginger. You clean and sauté your chicken pieces in olive, avocado or preferred oil, add the washed, peeled, and chopped chayote squash to the cooked chicken. You can add some sliced onions or green onions. Add crushed or sliced ginger (your preference as to the amount. Remember you can always add more to the sauté if desired.) After it’s cooked add some chicken broth to the cooked chicken and vegetables and some soy sauce or coconut amino acids. Cook down for about 30 mins or so. Serve alone or on cauliflower rice.

Found chayote at one of our local Walmart stores today and purchased three. My wife wanted roast beef and we have been searching for a potato substitute since we began KETO. Tried radishes jicama, and turnips but none made the grade. Since I was using my Instapot to cook the roast I knew that any veggies would be mush if they cooked the entire time so I stopped the Instapot halfway through the cooking cycle and added chayote, carrots, celery, and restarted the Instapot. At the end of the cooking cycle I removed the vegetables and restarted the Instapot as the roast wasn’t quite done. At the end of the cooking time I removed the roast and put the veggies back into the pot to heat back up. The roast was good and tender and the veggies were perfect. The chayote was very potato-like and my wife gave it a big thumbs up. Then she looked at me and asked where the Apple crisp was...Thanks Myra. Darlington, South Carolina
